Preface

Part one: Chinese food department

Mingyuan Xindu catering department can be roughly divided into the following departments: the Chinese Department (including Guangdong Xuan, multi function hall and 6 rooms), Western-style food department (including the garden restaurant and cafeteria) and beverage department (including the lobby bar, bar, bar, Lok Yi Chinese Western-style food bar and buffet). The third part: Beverage Department

Finally, we came to the last stop of the internship: the wine department, because of the National Day holiday and the end of the week practice, make our last stop time is particularly short, probably only a week ago.

The fourth part: summary

The above is my experience in the process of practice, from the overall perspective of the hotel management, from my two months of practice, can generally summarize the following aspects of the deficiencies:

序言

終於等到了實習的時候了,很早以前就從師兄那裏打聽到了大三的上半學期有實習,那時候可以説是急切地期盼着這一天的到來,因為大家再也無法忍受當前這日以繼夜的填鴨式的教學,儘管從師兄們那裏瞭解到實習並非像想象中的那樣是一件快樂的事情。

綜合自己的總體計劃,去我決定選擇酒店實習,並且經過抽籤選到了一家五星級的酒店,那是我所希望瞭解和學習的一家比較理想的酒店。這是南寧市唯一的一家五星級酒店——明園新都大酒店(TheMajesticHotel),名字對於南寧市民甚至是整個廣西都是如雷貫耳的了,巧合的是該酒店的總經理陳曉為先生經邀請在本校作了一次報告,才瞭解到原來明園新都大酒店建於1995年,是一家“九星級”的飯店——由一座四星級的明園飯店和一座五星級的新都酒店組成的。陳總的報告生動有力,這更加激發出我想好好了解一下這所飯店的慾望——他們所説的和他們所做的是一致的嗎?或者是還存在着什麼問題有待解決呢?我甚至開始盤算起我能在這個飯店學到什麼嗎?

那麼這座酒店到底怎麼樣呢?有什麼值得我們借鑑的呢?還有什麼需要改進的呢?給我的感受是怎麼樣的呢?那麼且聽我慢慢道來。

第一部分:中餐部

明園新都的餐飲部大致分成如下幾個部門:中餐部(包括廣東軒、多功能廳和6個包廂)、西餐部(包括花園餐廳和自助餐廳)和酒水部(包括大堂吧、樂怡吧、中餐吧、西餐吧和自助吧)。我們10人被分成了3個組,分別在不同的部門,並且每20天換一次部門,這樣能讓我們比較全面的瞭解整個餐飲業的服務、銷售與管理。酒店的這一做法讓我們感到挺滿意的,這也正和我們的心意。

我們組的4個人首先被分到了中餐廳——“這是酒店餐飲部門中最辛苦的部門!”還沒有開始工作,就聽到旁邊有人在私下這麼向我們告誡着。看來,我得真的要做好思想準備才是啊!

中餐廳的工作確實如前人所説——“辛苦!”酒店沒有給服務員們制定自己的崗位職責和工作描述,儘管這是現代企業人力資源管理中最關鍵的一環,在員工的印象中,自己的工作就是每天聽從領班的下達任務,隨時準備着聽從領導的指揮,沒有固定的活幹,或者説只要有需要,服務員什麼都能幹!擺台、折口布、傳菜、上菜、撤台這些所謂的必須做的本職工作外還得兼職勤雜工,什麼扛桌子椅子、鋪地毯等一些髒活、重活、累活都是我們男服務員們的事情。更讓人不可理解的是該酒店的上班時間是9小時工作制,而且每天還得加班1個小時左右(沒有加班費),我不知道這樣的作息制度有沒有違反《勞動法》,可是作為一名有血有肉的人來説都有自己的一個最低的底線,因為人畢竟不是一台機器,可以用來隨心所欲地使用。剛開始工作的那三天確實令人叫苦不迭啊,每天除了幹活還是幹活,最受委屈得要算是腳了,每天9小時的站立使得雙腳產生了嚴重抗議,下班的第一件事就是想找個地方坐下了休息一下。令人嚮往的人性化管理和殘酷的實際之間的差距由此可見一斑。

另一件令我感到尷尬的事是廣東軒的服務員制服真是簡單得可以,由於酒店沒有空餘的服裝供我這樣“高大威猛”的男生穿,所以他們索性讓我穿西褲和白襯衫,連馬甲和領結也省了,這身打扮使得我這個服務員和客人幾乎沒有區別,以至於有一次我正準備為一個會議提供服務時,卻被對方認為是來參加會議的嘉賓向我致以親切的問候!

員工代表着整個酒店的形象,這是酒店VI設計中的一個很重要的方面,好的員工制服不但能使得員工更加精神從而提高工作效率同時員工制服更體現出一個企業的一種內在的文化,沒有文化的企業如同一個人沒有了靈魂,那隻不過是一具行屍走肉罷了,缺少了士氣的企業又何來效益呢?

不過令我感到高興的是,酒店的員工大都都是那樣的熱情友好,他們並沒有因為我們是實習生而對我們冷漠生硬,在勞累之餘,同事們的一個甜美的微笑,一句再普通不過的“辛苦了”都會讓人感動,看來還是員工自己最能夠了解大家的心情,因為他們能站在員工自己角度來看問題,因為他們講述的是“老百姓的心裏話。”這也是酒店上層領導所最缺乏的素質之一!

中餐廳的日子就這樣一天天結束了,在這些日子我的確學到了不少的東西:除了能學到中式餐飲的服務程序和技巧、粵菜的特點和種類等課堂上所能學到的東西外,更能學到一些課堂上很難學到的東西:如何處理好自己的利益和酒店的利益、如何處理好同事之間的人際關係、如何調整自己的心態,更讓我瞭解到的是作為一個服務員應該具有強烈的服務意識。在一次與某部門經理聊天時,該經理提到了服務意識,我非常贊同他的觀點:“服務意識不但是要求服務員有着向客人提供優質服務的觀念和願望,同時應該對自己的同事也具有同樣的意識。”是啊,這才是“服務意識”的真正的含義,這才是一個服務員真正的素質的體現。第二部分:西餐部

明園新都的西餐廳名字叫做“花園餐廳GardenRestaurant”,我想可能是由於餐廳外面有一個小型的人工花園吧。餐廳的環境佈置得挺舒適的,是一個典型的西式餐廳,餐廳分成吸煙區和非吸煙區。不過如果能在適當的位置放上一些具有西方藝術的工藝品或壁畫這樣可能能更加吸引客人,讓遙遠的異鄉客人有一種有回到故國的感覺。

西餐廳的管理相對於中餐廳來説可謂是截然不同,從服務程序到員工的管理都比中餐廳規範和嚴格多。剛來到西餐廳感覺好像是卸下了一個很重的包袱似的,因為西餐廳的工作實在是太輕鬆啦!你幾乎什麼都不用幹,即使幹也是最簡單的活:擦餐具、撤台、擺台等,這比起中餐廳簡直是相差太遠了。不過在西餐廳你即使什麼不做也得站着,這使人感覺時間過得特別慢,雙腳又開始抗議起來了。有些時候,餐廳的服務員比客人還多,大家一齊看着客人用餐,讓客人感到非常彆扭。因此,建議西餐廳的管理人員能夠靈活地安排一下,譬如讓員工輪流休息,在人少的時候只要有兩個服務員就足夠了,讓大家輪換休息不但能使得員工減輕雙腳的疲勞,還能創造一種和諧的環境,這樣做又何樂而不為呢?

西餐的服務與中餐的服務大相庭徑,這常使得我們這些實習生不知道該做些什麼好,該怎麼做好。可是讓我們不解的是我們在實習的時候剛好酒店在為一些新員工進行培訓,但酒店就是不讓我們參加培訓。這使得我們大為不滿,為什麼不給我們進行培訓呢?我們雖然在酒店只是進行短期的實習,可是我們正是為了到酒店學習而來的啊。酒店是不是應該多為我們實習生考慮一下呢?

第三部分:酒水部

最後我們來到了實習的最後一站:酒水部門,由於國慶長假以及提前一週結束實習的的緣故,使得我們的最後一站的時間格外地短暫,大概加起來才剛一個星期而已吧。

第一天來到酒水部門竟然不知道自己該幹什麼。一個大白天過去了,我們幾個人就像幾隻無頭蒼蠅不知如何是好。終於,過來一個同事吩咐我們去擦酒杯,這才算找到了一點事情做。可是擦完酒杯後又不知該去何處了。唉,看來被人遺棄的感覺果然不是那麼好受的.。

酒水部門最忙的時候我想大概就是晚上的時候。由於當時正是酒店的旺季,所以幾乎每天晚上都有客人包廂或者大桌大桌的婚宴,於是我們這些無頭蒼蠅總算有了去處了,那就是去為客人倒酒,時間一長我們漸漸地明白我們的工作主要就是幫忙擦擦酒杯、擺酒杯、看台為客人倒酒,不過對於如何調製雞尾酒、如何磨製一杯上好的咖啡,我們一無所知,這的確讓人感到遺憾。

在酒吧的時間的確是過於短暫,再此不對其進行過多的品頭論足,不過有一點我可以毫無保留的説,不僅僅是這個部門,其他部門也同樣讓我有這樣的感受:那就是酒店缺少一種能夠凝聚人心的企業文化,一個將自己卻別於其他酒店、其他餐廳的一種文化,這使得每一座酒店都給人一種似曾相識的感覺,一種克隆的感覺,而這種文化卻足以支撐起整個酒店!

第四部分:總結

以上是我在實習過程中的一些感受,從總體上來看這個酒店的經營管理,從我的這兩個月的實習中可以大體總結出如下幾個方面的不足:

一、應該改變傳統的對待員工的態度。人是管理中的主體,這是所有的管理者都小、應該把握住的。管理中的上下級關係只是一種勞動的分工,不是一種統治與被統治的關係;相反,現代管理理念告訴我們:管理是一種特殊的服務,管理者只有做好對下級的服務,幫助下級在工作中作出優異的成績,管理者自己才會擁有管理的業績。現代企業的經營管理必須堅持“三個上帝”,即:市場、顧客和員工!有位老員工在酒店的BBS中對領導這樣説道:“善待員工,做個好領導,記住,你管理的不全都是機器。”我想這也許是每一位員工都想對領導所説的話吧。

二、企業缺少一種能夠凝聚人心的精神性的企業文化。一個民族有它自己的民族文化,一個企業同樣也需要有它自己的企業文化。企業文化的建設不是可有可無的,而是企業生存發展所必需的。當企業面臨各種各樣的挑戰時,又需要企業中所有的人能夠羣策羣力,團結一致,共度難關。對於沒有進行企業文化建設的企業來説,平時一盤散沙,遇事就會各想各的心事,而沒有人真正地為企業的發展進行過認真的思考,換句話説,就是沒有把自己融於企業之中。由此可見,企業文化的建設是企業生存和發展的必要保證。

三、企業缺少一套有效的激勵機制和晉升制度。酒店的激勵機制中過多的注重於物質上的激勵,而忽視了精神上的激勵。事實上,除了傳統的獎懲激勵外,還有很多的激勵方式值得我們管理者借鑑。有些時候領導對員工的一個微笑或是一句讚賞的收效強於對其進行加薪獎勵!

以上是為我此次實習的一些感受和想法,作為一種感受,它可能有很多的主觀的痕跡,不過只有員工才能真正體會到這種感受,因此,希望管理者在做出決策前,除了站在酒店的利益考慮的同時能多為員工考慮,只有這樣的決策才能得到更多員工的支持。最後,感謝酒店能提供這樣的實習機會,感謝老師的幫助,在此祝願酒店能夠越辦越好。
